Juniper’s Dairy Free Pancakes…

I was craving pancakes this morning, so I decided to see how my mom’s recipe stood up to a big change in the ingredients. They turned out fantastic!

In the future I’m going to try making them using different flours. I have some gluten intolerant friends so I’d like to experiment on their behalf. Besides the more I read about the benefits of going gluten free the more I want to reduce the amount that I’m eating. Luckily the Indian grocery stores carry all kinds of non-wheat flour. Why do they carry so many different kinds of flour? Well, the Hindu’s partake in different types of fasting for religious reasons through out the year. One of these is to abstain from wheat, so they make their roti (whole wheat bread) from a different type of flour and give their wheat flour to the temples to feed the less fortunate.

So first the pancakes, and then onto breads, cakes & more.


Juniper’s Dairy Free Pancakes

  • 1 1/3 Cup Coconut Milk (So Delicious)
  • 1 tsp Organic Vanilla Extract (optional)
  • 1 Egg
  • 2 tbsp Olive Oil
Combine all these ingredients and whisk thoroughly. Then slowly at the dry ingredients.
  • 1 1/2 Cups Flour (Durum Atta ~ Indian Roti Flour)
  • 3 tsp Baking Powder
  • 1 tbsp Organic Sugar
  • 1 tsp  Cinnamon (optional)

This recipe makes 12 4″ pancakes. Calories per serving: 80
